Sometimes I just don’t want rice. I’m either not in the mood or know for sure that I would over eat it! An easy substitute is cauliflower!
With a food possessor, process a chopped head of cauliflower until rice sized.
Once rice sized, in a microwavable bowl, microwave for about 2-5 minutes, depending on microwave, water content of the cauliflower and how soft you like it. Do not add water to the bowl as cauliflower has a high water content.
Serve like you would serve rice!
