Baked Spaghetti Squash “Pasta”

I originally made this dish as a side dish to some pork chops and to be honest, I could eat a whole big bowl all by itself! It’s that good!

My colleague Sophie suggested I try this one when I had requested recipes for this months theme of healthy recipes on the blog. I could tell this one was going to be good as she responded in no time and was super excited to tell me about it! It’s now going to be incorporated into our weekly repertoire. It’s perfect for lunch leftovers and all your colleagues will be jealous because it smells so good!


The original recipe says to cook the veggies stove top before adding to the pan, if you prefer a bit of crunch, you could skip this step and add the vegetables right to the baking dish.

I love how this squash looks so much like spaghetti!



The original recipe calls for regular shredded mozzarella, however the first time I made it, I only had bocconcini pearls and parm in the fridge and it worked out well. It’s just a different texture, but still delicious.

Baked Spaghetti Squash “Pasta”


1 whole spaghetti squash
2 tablespoons olive oil
1 diced orange or red bell pepper
1 diced zucchini
1 julienned carrot
2 minced cloves garlic
1 medium diced tomato
16 ounces tomato sauce
4 ounces shredded mozzarella cheese
1/4 cup shredded Parmesan


Preheat oven to 350 degrees F.

Wash and dry the spaghetti squash. Carefully stab the squash all over with a knife and place on a plate in the microwave for 8-15 minutes until soft.

While the squash is in the microwave, add the vegetables (bell pepper, zucchini, carrot, garlic, tomato) to a large pan and heat on the stove until al dente.

When the spaghetti squash is cooked, carefully cut in half, be careful not to burn yourself on the steam and scrape out the seeds with a spoon.

Fluff the flesh with a fork and add the squash to a 9″ x 13″ baking pan.  Add the heated vegetables, sauce and some of the cheese leaving some for the topping. Mix everything together.

Sprinkle the top with the rest of the cheese and bake for 30 minutes or until the cheese is bubbly.

Wait a few minutes to cool before serving.
