Peanut Butter Banana “Ice Cream” Bites

These Peanut Butter Banana Ice Cream Bites are a treat all year round, but especially in the summertime. It’s refreshing and creamy and it reminds me of those PB and Banana sandwiches when I was kid.

This recipe literally takes 15 minutes to make and a few hours to set up. You won’t be disappointed. They didn’t even last 24 hours in my house!

One thought I had while putting these together, was melting the peanut butter directly into the chocolate. Even though it would probably work, I think the texture of the frozen peanut butter is the way to go.

Peanut Butter Banana “Ice Cream” Bites

Ingredients:

1 – 2 large bananas
enough peanut butter to spread over the rounds
1/2 – 1 cup chocolate chips
2 tbsp – 1/4 cup milk

Directions:

Line a flat bottomed container or small cookie sheet with parchment paper.

Peel banana(s) and cut into 1/2 inch thick rounds.

Spread some peanut butter on the top of the banana rounds and place on a plate or cutting board and set aside.

In a small bowl, add the chocolate chips and milk. Heat in the microwave for 15 second intervals stirring at each interval until smooth.

Using a fork, dip peanut butter bananas into the chocolate to coat. Place on the parchment.

Freeze for 2-5 hours, or overnight.

If they were not frozen in a freezer safe container, you can place them in a container and the will keep for a week or two. If they make it that long.
