Praline Brownies

This might be the best brownie we’ve ever tasted and I say we, as my colleagues couldn’t get enough when I brought them in today!

The combination of a chocolaty chip coffee infused brownie topped with praline frosting lends itself to taste like a total southern delight. It makes me feel like I’m back in New Orleans, LA.

I was there a few years back with my family. My father and I ended up taking a cooking class and one of the recipes we made, was pralines! Buttery-brown sugary goodness with pecans! So delicious!

The praline frosting would also be good on your favorite brownie recipe and on the other hand, the chocolaty chip coffee brownie recipe would be good with a simple chocolate or vanilla frosting.

Another thing about this recipe is that it makes a 9 x 13 pan of brownies! This is perfect for parties and pot lucks.

Praline Brownies

Prep Time: 20 minutes     Cook Time: 40 minutes     Cool Time: 2 hours

Ingredients:

Brownies:

1/3 cup cocoa powder

1 ½ tsp instant coffee

½ cup plus 2 tablespoons boiling water

2 oz dark chocolate, finely chopped

½ cup unsalted butter, melted

½ cup plus 2 tablespoons vegetable oil

2 large eggs

2 large egg yolks

2 tsp vanilla extract

2 ½ cups sugar

1 ¾ cups all-purpose flour

¾ tsp salt

6 oz semi-sweet chocolate, chopped into chunks

Praline Frosting:

½ cup whipping cream

6 tbps butter

1 ½ cups packed brown sugar

1/2 cup chopped pecans, toasted

1 ½ cups powdered sugar

1 tsp vanilla

Directions:

Preheat oven to 350 F.

Butter or spray with pam all sides and bottom of a 9 × 13 inch pan. Line with parchment and make sure there is an overhang to help lift brownies at the end. It might need to pieces, depending on how wide your parchment is.

In a large bowl, whisk together boiling water, instant coffee and cocoa powder until combined.

Add finely chopped dark chocolate and whisk until chocolate is melted.

Whisk in melted butter, oil and vanilla.

Add yolks and eggs and whisk until combined.

Whisk in sugar, flour and salt, ½ cups at a time until fully incorporated.

Stir in semi-sweet chocolate chunks and put into pan. Smooth batter until it reaches all sides and corners.

Bake for 30 to 35 minutes or until toothpick comes out clean.

Meanwhile, as the brownies are in the oven, in a medium saucepan over medium heat, melt together cream, butter and brown sugar, stirring frequently. Once it boils, stir for an extra minute.

Remove from the heat and add the pecans. Stir in the powdered sugar and vanilla. Cool until it stiffens slightly, into a looser frosting approx. 15-20 minutes or until brownies are cooled.

Using the parchment paper, lift the brownies from the pan and place on the wire rack. This might take two people to do. Cool for another 45 minutes.

Spread frosting over brownies. Frosting will set up in approx. 45 minutes.

Cut and enjoy!
